This recipe comes to us from Ryan’s Grandmother-in-law, his wife Kim’s Grandma Eiting from Minster, Ohio.
Judging from some of the ingredients, it’s probably not exactly as old timey as some, but it’s delicious!
1 cup sugar
3 tablespoons corn starch
3 tablespoons light Karo syrup
1 cup water
3 tablespoons strawberry gelatin
3 drops red food coloring, if desired
2 ½ pounds or 1 ½ – 2 quarts of hulled strawberries
8” or 9” pie crust
Sweetened whipped cream
Combine sugar, corn starch, syrup, and water together in a saucepan. Bring to a boil and cook 1 minute until very thick. Gently stir in strawberry gelatin and food coloring. Cool until room temperature.
Slice berries or use whole. Lightly brush pie crust with a small amount of glaze. Alternatively, layer strawberries and remaining glaze, ending with the glaze. Chill before serving. Top with whipped cream and enjoy!
