Whether you’re picking fresh basil leaves from your garden, or your buying it from a store, pesto makes for a great summer addition to a variety of meals!
Kate has shared her pesto recipe with us this month and claims that, once it’s made, you can add it to simple meals to mix things up. Once she’s made the spread, Kate says that she often takes a tablespoon or two and mixes in enough olive oil to make it a little runny to create a great dip for bread or crackers. You could also add the pesto spread onto chicken right before placing it in the oven. Kate also mentions that adding it to a simple pasta can create a light and summery dish. 2 cups firmly packed fresh basil leaves
¾ cup grated parmesan cheese
¾ cup olive oil
2 tablespoons pine nuts
4 cloves garlic
Place all ingredients in blender or food processor. Cover and blend on medium speed (or process) about 3 minutes, stopping occasionally to scrape the sides, until smooth.
Recipe makes approximately 1 1/2 cups of sauce. Don’t forget that a little goes a long way! Enjoy!
