This easy and delicious recipe is one of Tina’s favorites. In the summer, grill the chicken for added flavor and then finish inside.
1 chicken breast per person
Salt and pepper
1 tablespoon olive oil
2-3 cloves garlic, minced
1-2 tablespoons balsamic vinegar
1 package grape tomatoes, sliced in half
10-15 fresh basil leaves, chopped
1 slice mozzarella per chicken breast
Season both sides of chicken with salt and pepper. Heat olive oil and cook chicken in it for 6 minutes on each side. Remove chicken from pan onto plate.
In same pan, put minced garlic in balsamic vinegar until it bubbles. Add grape tomatoes and a little salt and let simmer for 5 minutes. Add basil. Add chicken. Place 1 slice of mozzarella cheese on each chicken breast. Cover and let melt. Scoop tomatoes on chicken and serve.
