Daidria Eckels, a buyer’s agent on the Ryan Reynolds Team, shares her Grandma’s Easy Lasagna recipe just in time for fall!
1 package no-boil lasagna noodles
1 pound ground beef (or turkey)
2 small cans of tomato paste (or 1 large)
1 jar of your favorite spaghetti sauce (or 2 cans of tomato sauce)
1 small container ricotta cheese
1 small container large curd cottage cheese
1-2 packages shredded or sliced mozzarella or an Italian blend cheese
1 teaspoon minced garlic or garlic powder
Italian spices, basil, fennel, oregano to taste
Brown the ground beef in a pan. Drain off the grease and remove from heat. Add spices and garlic, along with the tomato sauce and paste. Stir well.
Mix the ricotta cheese and the cottage cheese together in a separate bowl.
Spray the inside of a large casserole (9 x 13) pan with spray cooking olive oil. Spread a light layer of the meat sauce on bottom, then place first layer of noodles in the pan. Spread cheese mixture onto the noodles, followed by the meat sauce and then either the sliced or shredded cheese. Repeat until you have 3-4 layers and end with cheese slices or shredded on the top.
Cover with foil, taking care not to touch the top of the cheese layer.
Bake at 400 degrees for about one hour, removing the foil during the last 10 minutes to brown the top.
Serve with garlic bread and salad…enjoy!
